Heat is sometimes natural, the kind that comes from the sun that ripens our fruit and prepares it for collection year after year. Yet there is human heat too, the one that everyday during these 130 years creates our work
Our cooking, on a low heat, takes place in the winery, every year around september. We introduce the fresh ingredients in our deposits, and with a lot of human heat we cook what we will enjoy the rest of the year. There have been a lot of years of know-how, of a comprehensive learning process of the mastery of the elaboration of the broth that we now enjoy, thanks to a great human team and many wineries afterwards. It is the most important step and the one that combines the four elements to create the fifth one, the everything, the unit, the completeness: Wine.
